Winter Coleslaw

I fancied something different than accompanying vegetables this week so I decided to try out Jamie Oliver’s winter coleslaw. As usual I didn’t get all the ingredients he listed, so this is my version of his dish, which was delicious nonetheless!

To have: 2 carrots, 1/2 fennel, 4 large radishes, 1/6 red cabbage – could also use white cabbage, tiny bit of red onion

For the dressing: olive oil, sprinkle of parsley and dill, natural yoghurt in place of mayonnaise, 1 spoon of mustard, salt and ground black pepper to taste.

To do: Put all the vegetables through your finest slicer of the food processor, then mix and season well. And at the last minute, so it doesn’t go too soggy, add the dressing and give it a good stir. That’s it!

According to today's Daily Mail a Mediterranean-style diet rich in fruit, vegetables and fish can almost halve the risk of Parkinson's disease, according to new research.

The study revealed healthy eating habits slashed the risk of the incurable brain disorder by up to 46 per cent.

The findings, published in the European Journal of Neurology, support earlier studies suggesting diet could have a key role to play in preventing a disease which affects 120,000 people in the UK.
