The chef
Friday, February 27, 2009 at 9:27AM Adams & Adams is a bespoke catering company with a passion for world cuisine. It was set up six years ago by Kate and Andrew Adams, a husband and wife team, who between them have more than 20 years’ experience. Many of their clients live in Roquefort so I caught up with Andrew to find out more...

DH: How long have you lived in this area?
Andrew: Just over 11 years.
DH: Where’s your hometown?
Andrew: Bath, in South West England. That’s where I developed my love of rugby and I worked in a couple of bars and restaurants there too, fine-tuning my taste buds.
DH: What’s your favourite gadget, object or thing?
Andrew: I couldn’t live without my laptop, but my favourite bit of kit would have to be the hog roaster. It’s just such a fun gadget and the crackling is simply fantastic.
DH: What’s your guilty food pleasure? I read somewhere Raymond Blanc’s is Kit Kats!
Andrew: It’s between a pork pie with Branston Pickle or better still toast with marmite and strawberry jam. The sweet and sour works really well.
DH: It’s a tricky thing to ask a chef, but do you have a favourite meal?
Andrew: It would have to be something that involves beef, foie gras and/or truffles.
DH: Would you choose the mountains or the beach for a day out?
Andrew: The mountains. My first years in France were spent as a ski instructor in the Three Valleys and I like being away from the coast sometimes.
DH: Where in the world is your favourite holiday destination?
Andrew: Trinidad and Tobago, although the Himalayas are on my wish list.
DH: In your opinion, what does Roquefort lack?
Andrew: A real heart to the village, come 6pm nothing happens which is a shame.
DH: Who is your favourite chef?
Andrew: Marco Pierre White, I like his honesty and he was one of the first chefs in the UK to merit three Michelin stars.
DH: What inspires you?
Andrew: Plenty. Food, cultures and ideas change all the time. We enjoy keeping up with the trends, but often clients opt for traditional especially if their event is at home.
DH: How does the year ahead look for Adams&Adams?
Andrew: Corporate gourmet lunches, cocktail parties, degustation dinners and plenty of barbecues and hog roasts. We’ll be busy as usual at the film festival, MIPIM and the Monaco Grand Prix. We’ve also got some great private parties booked and more weddings than ever before, which is great.
