The floral designer

Now Roquefort is fortunate enough to have its own extremely talented floral designer, trained by the acclaimed Jane Packer (she did the flowers for Sarah Ferguson's wedding to Prince Andrew). I caught up with Tiffany to talk blooms...

DH: Everyone loves flowers so it must be great working with them. What’s the best thing about your work?
Tiffany: I’ve always loved putting stems together and you tend to meet people at very happy and special moments in their lives. Flowers lift the mood, so even though something like a wedding can be nerve-wracking the reward of seeing delighted reactions is fantastic.
DH: Where do you start?
Tiffany: I go to the client’s house to see what they like. I think about the colour first (& budget) and the rest falls in to place. Sometimes people have already decided, like a recent client who wanted red, white and blue – to represent the French flag - and sometimes the setting itself will inspire you.

DH: As a mum who has lived in Roquefort for seven years, what are the best and worst things about this part of the world?
Tiffany: Like everyone I love the sun and the light. Unfortunately like most people I’ve got to say the bureaucracy is the worst thing.
DH: When you're not working what's your favourite day out?
Tiffany: It has to be a nice beach somewhere with
sun-loungers and lunch.
DH: What’s your favourite flower?
Tiffany: That changes, but at the moment I really like working with pale pink Hydrangeas for their size and the Gloriosa lily which is spiky and has a great structure.

DH: How long did it take you to learn French?
Tiffany: I’m still learning!
DH: How do you keep flowers in the heat and during that heatwave?
Tiffany: When I bring my flowers back from the market I separate them, cut the stems and put them in clean cold water in the shade. I leave them like this until the very last minute.
DH: What’s been popular this season?
Tiffany: Because it’s summer table arrangements for outdoor parties, dinners or birthdays, also contracts where every ten days or so, I change the displays – this has been especially popular for people renting their villas.
